Do you love Mexican food, but don’t know quite how to make it? Periodically I’ll be adding some of my favorite recipes. I’ll start with salsa.
Fresh Salsa Recipe
6 Roma tomatoes 1 large white onion 1 Serrano or jalapeno pepper 1 bunch cilantro 1 clove of garlic or garlic powder Salt Pepper Olive or vegetable oil 1/4 cup water
Chop the tomatoes, onions, jalapeno and cilantro. Smash the garlic.
Mix the tomato, onions, pepper, cilantro and garlic. Toss gently. Add salt and pepper to taste. Add about 1 to 2 tablespoons of oil and the water to your chopped vegetables. Toss gently.
Refrigerate the salsa until your guests arrive. Serve with chips.
If you don’t want to chop the vegetables you can always put them in a food processor for a couple of seconds.
Mexican Guacamole Recipe
Tonight we had a get together at my house. We barbequed some ribs, some chicken wings and fajitas. Of course we made Fresh Salsa, but we also made some great Mexican Guacamole.
If you've already made the salsa, then the guacamole is going to be so easy.
You'll need: 3 or 4 avocados A pinch of salt A pinch of black pepper A small amount of water
Split the avocados open and put them in a bowl. Set aside one of the pits. Smash the avocado until it's a bit smooth, but still a little chunky. Add salt and pepper to taste. Slowly mix in a little bit of the water - don't make it too runny.
Now toss in about 5 or 6 spoonfuls of your fresh salsa and mix it all together. Now toss in the leftover avocado pit. The pit will keep the avocado from turning dark.
Some folks use lemon juice, but I prefer to use the pit so I can avoid the taste of lemon in my guacamole. Grab some chips and you're ready to go. Enjoy!
Warm up with a cup of hot Mexican chocolate
There's no better way to make a cup of authentic Mexican chocolate, then by using a handcrafted Mexican molinillo.
The molinillo is made of turned wood and put into a pot of hot milk and Mexican chocolate. It will quickly turn your hot chocolate into a frothy drink.
You put the molinillo between your palms and rotate it back and forth until the hot chocolate becomes frothy and delicious.
To make a cup of chocolate add one cup of milk for each serving and then break off a piece of Mexican chocolate - I've got Ibarra, La Popular, and Abuelita brands available. They're all delicious, although I prefer La Popular because that's the chocolate I grew up drinking.
